Cinnamon Raisin Bagel French-Toast with Caramelized Bananas

On a morning off after baking all night in the kitchen, most of you would think we’d be off doing something outside in the sun or catching up on that precious commodity called sleep. Not us…we’re back in the kitchen testing out new bagel or cream cheese recipes. Sometimes, we create recipes using our bagels in different ways, which is how we came about making Cinnamon Raisin Bagel French Toast with Caramelized Bananas.

This is a basic recipe that will be the foundation for many varieties so feel free to experiment with this one. Really, any kind of fruit can be used to top this French toast, and the sweetness can be elevated or diminished by swapping out the maple syrup for powdered sugar, honey, fruit preserves, crème fraiche, cream cheese, or heavy cream.



Gather your Ingredients:

  • 5 to 6 Day-Old Cinnamon Raisin Bagels
  • 2 Eggs
  • 1 C Milk
  • 2 T granulated sugar
  • ½ t Ground Cinnamon
  • 2-3 Ripe Bananas, sliced
  • 1 T Unsalted Butter
  • 1 T Unsalted butter sliced into 6 pieces.
  • 1 Pinch Kosher Salt

Preheat the oven the 375 degrees and prepare a casserole dish with butter or shortening. Crack eggs into a shallow bowl, add milk and whisk until well blended. 

Slice bagels in half and pierce them all over with a fork.



Dip bagel halves in milk & egg mixture, allowing each piece to rest in the dish for a minute or two to soak in the liquid.


Layer bagel halves in prepared casserole dish, pouring any remaining milk/egg mixture over the top of the bagels. Mix sugar and cinnamon in a separate dish and sprinkle half the mixture on the top of the casserole, save the remainder and set aside.



Cover casserole dish with aluminum foil and bake for 25 minutes. While French toast is baking, peel bananas and slice diagonally into 1 inch pieces.


Heat 1 T butter on low heat in a sauté pan until melted and hot. Add bananas and sauté for 3-4 minutes, then sprinkle with remaining half the cinnamon sugar. Simmer on the lowest setting possible.


At the end of the baking time, remove the aluminum foil cover and dot the top of the French toast with 1 T butter pieces and put back in the oven for 5-7 minutes longer. Remove French toast from the oven, top with caramelized bananas, and serve with genuine maple syrup. Enjoy!
